«Play, el juego de la pastelería» is a pastry book by Rafel Vilà and the Barcelona Guild's Pastry School (Grupo Vilbo, hardback).
It proposes a playful and creative approach to modern pastry: yo-yo-shaped macarons, caramel marbles and pirate chocolates show that high pastry can be fun without losing technical rigour. It includes over a hundred colour photographs, step-by-step processes and complete recipes to renew the sweet tradition.
Published in 2011, in Spanish; 128 pages.
A work intended for pastry professionals seeking inspiration and for advanced amateurs who want to experiment with creative proposals.
